Position Overview
As the Ranch Lead Chef at Cedar Cove Ranch, you will be responsible for overseeing all aspects of culinary operations. You will be creating and delivering exceptional dining experiences for our guests across multiple lodges. The position requires expertise in high-end gourmet cooking, particularly game meat preparation, and the ability to serve groups ranging from 2 to 50 people simultaneously.
Please note: Previous experience working at a hunting ranch as a chef is highly preferred for this position. This role focuses on hands-on cooking rather than managing a large culinary team.
Primary Responsibilities
- Lead and manage to deliver high-quality meals and dining experiences that exceed guest expectations
- Develop and execute seasonal menus that showcase local ingredients and reflect the unique character of Cedar Cove Ranch
- Expertly prepare game meats and gourmet cuisine for diverse guest groups
- Manage inventory and food costs, ensuring that budgetary targets are met
- Optimize food and beverage margins through effective cost control
- Maintain a safe and sanitary kitchen environment, following all health and safety regulations
- Shop F&B items and plan 3-4 weeks in advance for needs
- Take a proactive approach to inventory management, meticulously monitoring stock levels, and conducting regular assessments (using local vendors for pricing strategy)
- Work with and provide guidance to Assistant Chef and F&B assistants as needed
- Collaborate with other departments to ensure seamless coordination of food service for events and activities
- Personalize guest experiences – ensuring details are considered while planning guest dining
- Resourcefully solve any issues that arise and take control of problematic situations
- Stay updated on industry trends and best practices, incorporating new ideas and techniques
Qualifications
- Proven experience as a Ranch Chef or in a similar role in a high-end, luxury setting
- Strong culinary skills with specialization in game meat preparation
- Excellent leadership and communication skills, with the ability to motivate and inspire a team
- Solid understanding of kitchen management, including inventory control, cost management, and food safety
- Creative approach to menu development, with a focus on innovation and seasonality
- Ability to work effectively in a fast-paced environment, managing multiple priorities with attention to detail
- Culinary degree or equivalent certification is preferred
- Experience with calendar management and Microsoft Excel
