We are seeking a trustworthy, mature, well-organized and efficient executive chef and chef’s assistant (two-person team) for a premier private hunting club near Gridley, CA for the 2025/2026 duck hunting season. The right person will love creating high-quality meals from scratch, and have a temperament that is flexible to last minute changes, special requests and the differing personalities of the members being served. An average mean will be prepared for 15-20 people. This position requires the ability to shop carefully for quality food and to manage the kitchen for efficiency, cleanliness and cost effectiveness. Ideal candidate should have exceptional culinary skills, strong organizational skills with great attention to detail. You must be a self starter, with a cheerful attitude and strong people skills.
Essential duties include:
- Creating and coordinating wonderful dining experiences based on preferences of club members. At times these meals will be family style. At other times, the meals might be plated and served. Serving meals will also include dish cleanup and kitchen cleanup after meals.
- Maintain menu board.
- Perform grocery shopping and stock the club as needed.
- Maintain a meticulously clean prep kitchen
- Observe occupational, health, and safety standards in the kitchen at all times
- Perform any other miscellaneous tasks as requested by club manager
Essential skills:
- Meal preparation and planning, and receptive to input from members
- High quality culinary skills and the ability to serve meals at scheduled times
- Traditional cooking and grilling expertise
- Must be adept at high quality desserts, as well as making soups from scratch
- Some lunches will require “made to order” flexibility
Weekly work schedule will be:
- Mid October to First weekend in February
- Tuesday – Dinner
- Wednesday – early breakfast and lunch
- Friday – Dinner
- Saturday – early breakfast, lunch and dinner
- Sunday – early breakfast and lunch
Housing (2 bed 1 bath house) included in nearby Gridley. In addition, the club has an onsite bedroom and bathroom if our chef would prefer to spend the night before early morning breakfasts on the premises.
Pay:
Executive Chef $5,500/month 4 months $22,000 + End of Season bonus $10k totaling $32k
Prep Chef/Assistant $3,850/month 4 months $15,400 + End of Season Bonus $4k totaling $19,400
