Job Title: Private Chef or chef couple/family for a Private Hunting Lodge/Farm
A family owned farm/estate is looking for a Chef that can manage hunting season cooking for guest hunters as well as cooking for the family when they are visiting the farm. Ability to manage a small garden and forage the grounds for wild mushrooms, berries etc. is a plus. Most important is the ability to clean, breakdown and utilize various game meats, mainly wild duck and deer. All of the equipment necessary to butcher, breakdown, and utilize meats for sausages and charcuterie are on site in a commercial kitchen. Occasional travel with the family is also necessary to Little Rock, Ark.and Aspen, Colo. and other possible destinations. However, the main focus is for a chef to utilize the game meats and cook great food for the family and guests.
Responsibilities:
- Meal planning and preparation for family and guests
- Cook a wide variety of foods and cuisines
- Shop/Order ingredients and supplies as needed
- Upkeep and Maintenance of the kitchen, equipment and refrigeration/ freezer units
- Collaborate with year round grounds staff
- Communicate and update the family as needed in an effective manner
- Collaborate with the family on the overall vision for the lodge/farm
- Utilize as much of the game meat for future use
- Assist the year round grounds staff as needed to maintain the grounds
Qualifications:
- Experience in farm to table cuisine in a restaurant or private setting
- Whole animal butchery
- Experience with cooking wild game
- Experience with charcuterie, canning, preserving is a plus
- Flexibility in schedule especially during hunting season
- Strong organizational skills
- Knowledge of Southern BBQ/Smoking meats is a plus
- Knowledge or willingness to learn about foraging
- Knowledge or willingness to learn experiment with an R&D garden
- Long Term Intent
- Valid Driver’s License
- Willingness to a background check
Compensation:
- Salary negotiable and based on qualifications, experience
